Chocolate Chip Cookie Pie

Amazingly enough, even with having two babies in the house, I’ve been getting a lot more baking done. Here is the Chocolate Chip Cookie Pie I made over the weekend for Sunday’s Thanksgiving dinner. This has become my go-to pie when I need to make a dessert quick and easy.

Here is the recipe (after the cut!)…


  • 4 eggs
  • 1 cup flour
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 cup melted butter
  • 2 cup chocolate chips (these are hard to come by here in Poland, so I buy some chocolate bars and cut them up!)
  • 1 pie shell (I usually use a French crust)
  1. Beat eggs until light and foamy. Add flour, sugar and brown sugar and beat until well blended. Blend in melted butter. Stir in chocolate chips and nuts. Pour into pie shell.
  2. Bake at 165 degrees C for 1 hour. Remove from oven. Serve warm with whipped topping or ice cream, and make love to the pie with your mouth.
